Well this one is for you.  A pickle with a kick of spice that you can adjust to your taste.  It works perfectly as a pickle side dish to complement any meal. Because it is pickled, it can be stored for over a week in the refrigerator and it still maintains the crunch of the cucumber.  </p>
<p>Kimchi is a Korean pickle used as a side dish and served commonly with grilled meats and rice.  It can be made of any vegetables, cabbage, radish, cucumber are the most common.  It is typically made to preserve vegetables for winter months.  It is a flavorful spicy pickle that is <b>easy</b> to make.</p>
<p>In this version, you can enjoy it instantly and throughout the week as it stays well and develops flavor as it marinates. It is amazing how the cucumbers maintain crunch even after a few days. <b> It is very simple to make, just chop and mix together the ingredients! No cooking involved, its easy.</b></p>

<p><strong>Ingredients:</strong></p>

<li>2 cups of sliced Cucumbers, keep the skin on (English or Persian work best as they have very few small seeds). If you cannot find these then regular cucumbers can be used, but remove the seeds in the middle. You can cut them in any shape you like, circles, half moons, quarter chunks&#8230;.as you like.</li>
<li>1/4 cup sliced white onion</li>
<li>1 green onion stalk sliced (or green garlic chives if you can find them).You can slice them small or cut into large 2&#8243; pieces</li>
<li>2 fresh garlic cloves diced small</li>
<li>1/4 cup grated carrots</li>
<li>1/2 cup pealed, halfed, sliced white radish (Korean radish works great for this)</li>
<li>1/4 tsp Salt</li>
<li>2 tbsp Soy Sauce</li>
<li>2 tsp Korean dry Hot Pepper Powder called Gochugaru. Easily available in Asian grocery stores. If you cannot find it then use any dry red chili powder to your taste. Avoid using chili paste or chili sauce, it is not a good substitute for this dish.</li>
<li>2 tsp Sesame Oil</li>
<li>2 tsp Sesame seeds</li>
<li>1 tsp Sugar</li>
<li>1 tbsp Vinegar</li>
</ul>

<li>Add the rest of the ingredients and stir well till each vegetable is coated on all sides.</li>
<li>Let it sit for 30 mins on the counter in an airtight container.</li>

<li>1/2 cup sliced celery</li>
<li><span style="background-color: transparent; color: var( --e-global-color-text ); font-family: var( --e-global-typography-text-font-family ), Sans-serif; font-weight: var( --e-global-typography-text-font-weight );">1/8 cup of chopped fresh cilantro, or parsley, or mint, or dill or a combination</span></li>
<li>1/2-1 cup avocado diced</li>
<li>Optional: 1/8 cup chopped nuts (almonds or walnuts)</li>

<li>8 large shrimps (cleaned, deveined, no tail) or 2 chicken breasts</li>
<li>2 tbsp Old Bay seasoning</li>
<li>1/2 tsp salt</li>
<li>1 tbsp EVOO</li>
</ul>
<div><b>For the dressing</b></div>
<ul>
<li>2 tbsp EVOO (Extra Virgin Olive Oil)</li>
<li>2 tbsp of honey</li>
<li>2 tbsp of lemon or lime juice</li>
<li>1/8 tsp&nbsp; salt</li>
<li>1/8 tsp cracked Black Pepper</li>
<li>Optional: if you like a creamy dressing add 2 tbsp of Greek Yogurt</li>
</ul>
<p><b><br></b><strong style="background-color: transparent; font-size: 1rem; color: var( --e-global-color-text ); font-family: var( --e-global-typography-text-font-family ), Sans-serif;">Method:</strong></p>

<li>If using meat, mix together all oil, salt, Old Bay with the shrimp or chicken. Let it sit for 10 mins.</li>
<li>In a pan, ideally cast iron if you have it. Heat it well on medium high. Once hot add the meat, toss and cook till done. Shrimp cooks very fast, as soon as it turns pink it is cooked about 5 mins.</li>
</ol>
<p><span style="background-color: transparent; color: var( --e-global-color-text ); font-family: var( --e-global-typography-text-font-family ), Sans-serif; font-weight: var( --e-global-typography-text-font-weight );">&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; Chicken will take longer, approx 20 mins. Turn to color both sides. Cover and cook till fully cooked and no pink in the&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; middle. Slice into strips or dice into 1&#8243; pieces, your choice.</span></p>
<ol>
<li><span style="background-color: transparent; color: var( --e-global-color-text ); font-family: var( --e-global-typography-text-font-family ), Sans-serif; font-weight: var( --e-global-typography-text-font-weight );">In the same hot pan, add the corn and cook till lightly charred and colored about 81-0 mins. This is optional, it adds great grilled flavor especially if not using any meat. Otherwise you can add it straight without cooking.</span></li>
<li>In a small bowl mix together all the dressing ingredients.</li>

<li>In a bowl, add oil, Old Bay and toss in the shrimp. Let it sit for 10 mins.</li>
<li>In a pan, ideally cast iron if you have it. Heat it well on high. Once hot add the Shrimps, toss and cook till done. Shrimp cooks very fast, as soon as it turns pink it is cooked- about 5 mins total. Set aside to cool</li>
<li>Dice the shrimp into smaller pieces, save one whole for the garnish.</li>
<li><span style="background-color: transparent; color: var( --e-global-color-text ); font-family: var( --e-global-typography-text-font-family ), Sans-serif; font-weight: var( --e-global-typography-text-font-weight );">In a small bowl mix together all the dressing ingredients, ensure no lumps and smooth.</span></li>
<li>Toss the shrimp and celery with the dressing to ensure all is well coated.</li>
<li><span style="background-color: transparent; color: var( --e-global-color-text ); font-family: var( --e-global-typography-text-font-family ), Sans-serif; font-weight: var( --e-global-typography-text-font-weight );">When ready to serve, cut the Avocado in half longways. Remove the pit.&nbsp; Take a spoon and gently scoop the avocado whole from the shell. Put is back in the shell and dice it without cutting the skin/shell. This helps to make it easier to eat, however completely optional. You can leave the half as is and while eating scoop out the avocado with each bit.</span></li>

Add the whole shrimp on top for garnish.</span></li>

<p>I love beets! The vibrant deep red color, slightly sweet plus all its health benefits, its delicious.&nbsp; My favorite way to enjoy them is in a simple salad. Sliced beets, sweet mandarin oranges, crisp onion, fresh mint, dressed in a honey lime dressing. This is a super simple side salad that is not only healthy but a colorful treat for the eyes. Want a non leafy salad, this is a great option.</p>
<p><span style="color: var( --e-global-color-text ); font-family: var( --e-global-typography-text-font-family ), Sans-serif; font-weight: var( --e-global-typography-text-font-weight ); font-size: 1rem;">As they say you should eat a rainbow; foods with natural colors like beets are super healthy and packed with nutrition.&nbsp; Beets are a nutrient dense root vegetable low in calories, fat and cholesterol, making them a heart healthy choice.&nbsp; They also have Calcium, Vitamin A and D as well as rich in iron.</span></p>
<p>For this recipe you can use fresh beets if you can find them, otherwise canned beets will work just fine. It does need the freshness of an herb preferably mint, but parsley or cilantro will work as well. The honey lime dressing is perfect to add some brightness and a sweet tangy flavor.&nbsp; Try it out.</p>

<li>1 (15 oz) Can sliced beets, drain the liquid out. Or about 2 cups of fresh Beets</li>
<li>1 1/2 cups mandarin oranges, drain the canned liquid out. Or you can peel and cut out segments from a fresh orange.</li>
<li>1/3 cup sliced raw red onion</li>
<li>pinch of salt</li>
<li>1/4 tsp cracked black pepper</li>
<li>2 tbsp chopped fresh mint (parsley or cilantro can be substituted)</li>
<li>1 tsp EVOO (Extra Virgin Olive Oil)</li>
<li>2 tsp honey</li>
<li>2 tsp lime or lemon juice</li>
</ul>

<p><strong>Method:</strong></p>
<ol>
<li>If using canned beets and mandarins, be sure to drain out the liquid before using.</li>
<li>For fresh beets, peel them, slice them 1/4&#8243; thick, layer in a pan, roast them for 30 mins at 400 degrees Fahrenheit till fork tender.</li>
<li style="font-size: 16px;">For the dressing, in a small bowl mix together, oil, honey, lemon juice salt and pepper till fully combined.</li>
<li>In a serving dish, layer beets, mandarin, sliced oranges, chopped mint, drizzle dressing on each layer.&nbsp; Avoid mixing as the colors of the beets will run into the other ingredients.</li>
<li><span style="background-color: transparent; color: var( --e-global-color-text ); font-family: var( --e-global-typography-text-font-family ), Sans-serif; font-weight: var( --e-global-typography-text-font-weight );">Crack a few grinds of black pepper on top and you are ready to enjoy!</span></li>

<li>Because the color of beets will run, this is a salad that you want to assemble at the last minute.&nbsp; If you do it ahead of time the color will bleed making the onions and mandarins red in color as well. You can certainly keep all the ingredients ready separately and make the dressing ahead. Just be sure to assemble at the last minute.</li>
<li>other ingredients that would go well are sliced celery and diced cucumbers for added crunch. Almonds on top can also add a great crunch if you like nuts.</li>

<p>Baingan Bharta is a known Indian <b>vegetarian</b> dish.  It is typically cooked with tomatoes and eaten as a curry with roti and rice.  However there is a lesser known way to make Baingan Bharta as a healthy cold salad.  <b>Baingan or Eggplant is roasted and then mixed with yogurt and flavoring spices (not spicy).  Roasting it gives it a nice earthy smoky roasted flavor along with roasted cumin. </b> This is a yummy healthy salad alongside any meal.<b> It can also be a perfect dip with pita bread, Veggie platter with carrots and celery or chips</b>. </p>
<p>Yogurt has probiotics which naturally aide in digestion, especially after eating such heavy meaty and spicy meals. It is common for yogurt to be served with Indian meals.  With the addition of eggplant a simple plain Raita can become a flavorful side dish worthy of entertaining. For vegetarians this is a healthy option.</p>
<p>This is a versatile dish, use as a salad, use as a raita, use as an appetizer dip, you can even use as a creamy sandwich filling&#8230;.possibilities are endless, get creative! Here is a starting point, but you can easily adjust the quantities of the ingredients based on your taste and size of eggplant. <span style="color: var( --e-global-color-text ); font-family: var( --e-global-typography-text-font-family ), Sans-serif; font-weight: var( --e-global-typography-text-font-weight ); font-size: 1rem;">If you like the Mediterranean Baba Ganoush, you will like this too as it is very similar.</span></p>

<li>1 cup plain yogurt (whole or Greek)</li>
<li>1 large eggplant / 2 cups raw</li>
<li><span style="background-color: transparent; color: var( --e-global-color-text ); font-family: var( --e-global-typography-text-font-family ), Sans-serif; font-weight: var( --e-global-typography-text-font-weight );">1/2 bunch / 1/2 cup small sliced green onion/scallion (white and green parts)</span></li>
<li>1/4 tsp salt, can use black or pink salt if available</li>
<li>1/4 tsp cracked black pepper</li>
<li>1 tsp Chaat Masala</li>
<li>1 tbsp roasted cumin powder</li>
<li>Pinch red chili powder or flakes or <a href="https://www.tajin.com/us/tajin-clasico/" target="_blank" rel="noopener">Tajin</a> (optional)</li>
<li>1 tbsp diced green chili&#8217;s (optional)</li>
<li>1 tsp diced garlic</li>
<li>1 tbsp Oil</li>

<p><strong>Method:</strong></p>
<ol>
<li>With a fork or knife, prick the eggplant all over and rub the oil all over the eggplant.</li>
<li>On 375 degree F oven, roast eggplant for 30-45 mins (depending on size) till it is completely softened.</li>
<li><span style="background-color: transparent; color: var( --e-global-color-text ); font-family: var( --e-global-typography-text-font-family ), Sans-serif; font-weight: var( --e-global-typography-text-font-weight );">While eggplant is cooking, you can move to next steps&#8230;.In a small pan, dry roast the cumin seeds on medium heat for 5 mins. You should start smelling it, does not need to fully brown.  Grind it to a powder and set aside.</span><b><span style="background-color: transparent; color: var( --e-global-color-text ); font-family: var( --e-global-typography-text-font-family ), Sans-serif;"> Don&#8217;t skip this step, i</span><span style="background-color: transparent; color: var( --e-global-color-text ); font-family: var( --e-global-typography-text-font-family ), Sans-serif;">t is really important to use freshly made roasted cumin powder for this instead of store bought.</span></b></li>
<li style="font-size: 16px;">In the same pan, in 1 tsp of oil fry the garlic till golden brown. Drain and set aside.</li>
<li style="font-size: 16px;">Cool the eggplant to room temp.  Remove the skin, add to a bowl.</li>
<li>Add yogurt and using hand blender blend to a paste. You can leave it a bit chunky if you like. <b>Do not add yogurt to hot eggplant.</b></li>
<li><span style="background-color: transparent; color: var( --e-global-color-text ); font-family: var( --e-global-typography-text-font-family ), Sans-serif; font-weight: var( --e-global-typography-text-font-weight );">Stir in the rest of the ingredients. </span></li>
<li><span style="background-color: transparent; color: var( --e-global-color-text ); font-family: var( --e-global-typography-text-font-family ), Sans-serif; font-weight: var( --e-global-typography-text-font-weight );">Sprinkle a pinch of chaat masala and or red chili powder on top for garnish</span></li>

<p><strong>Tips:</strong></p>

<li><b>This is the perfect dish for &#8220;dhungar&#8221; or smoking</b> if you know how to do it.  Once the dish is made, lay a small metal bowl in the middle, add a hot coal, add oil and close with cover to let the smoke infuse in the dish. This is not a beginner step so it is not mentioned above, but if you feel comfortable, this adds a ton of amazing smoky flavor and fragrance.</li>
<li>The consistency will depend on which yogurt you use.  Greek Yogurt is best for a thicker creamy consistency, while low fat yogurt can be used for thinner consistency. </li>

<p>Raita, is a yogurt dip commonly served alongside Indian and Mediterranean dishes.  Raita is a great accompaniment to balance out the heavy barbecued meats like kabobs as well as balance the spiciness of rice dishes like biryani.  Raita is not just a dip or sauce but more like a salad eaten alongside the main dish.  Raita is a must especially if you are new to spicy foods! It is common for parents to alternate bites of food with spoonful of yogurt for children as they learn to adapt to spices.</p>
<p>Yogurt has probiotics which naturally aide in digestion, especially after eating such heavy meaty and spicy meals. It is common for yogurt to be served with Indian meals.  With a few added ingredients the simple plain yogurt can become a flavorful raita worthy of entertaining. Simply add a few vegetables to add color and crunch to the yogurt. No cooking involved, just chop and mix and a flavorful yogurt dip is ready in a matter of minutes.</p>
<p>Raita can be made in many variations, but the base ingredient is always yogurt.  You can add herbs and vegetables like cucumbers, tomatoes, even red beats for a unique pink color.  Some people like the consistency to be runny while others like it thicker.  It is very easy to customize it to your preference of ingredients and consistency.  In a true Indian fashion, many also add a tempering or waghaar on top of oil, mustard seeds, curry leaves and red chili.  However I don&#8217;t particularly feel its needed, why mess with a perfectly healthy dish and add unnecessary calories!  Here is a healthy cucumber raita recipe that can be ready in under 5 mins.</p>

<li>A few grinds of cracked black pepper</li>
<li>1/8 tsp Chaat Masala</li>
<li>Pinch red chili powder (optional)</li>

<li>Dice cucumber into small pieces(1/2&#8243;) with or without skin. You can also grate the cucumber (with or without skin), be sure to remove the seeds and squeeze out the liquid from the grated cucumber.</li>
<li>In a bowl mix all the ingredients to ensure no lumps.</li>
<li>Optional, add a little bit of milk at a time if you would like a thinner consistency.</li>
<li>Sprinkle a pinch of chaat masala and or red chili powder on top for garnish</li>

<p>Summer brings us a bounty of fresh tropical fruits. It looks like a small pumpkin with brown skin and white crunchy flesh inside similar to radish. It has no prominent taste which makes it perfect for texture and takes on any flavors you add to it. Mint and basil gives it an herby fresh taste. Honey and lemon makes a perfect balance of sweet and tart for the light dressing.</span></p>

<p><strong>Ingredients:</strong></p>

<li>1 cup of julienne cut mango ( matchsticks). Try to get medium ripe, don&#8217;t use mushy over ripen mango.</li>
<li>1 cup of julienne cut Jicama. Equal amount and cut as mango.</li>
<li>2 tbs of chopped mint</li>
<li>2 tbs of chopped basil(optional)</li>
<li>2 tbs of honey</li>
<li>1/4 cup of lemon or lime juice</li>
<li>Pinch of salt</li>
<li>1/8 tsp chili powder or flakes (optional)</li>
<li>1 sliced red radish with skin on for color (optional)</li>
</ul>

<li>Peel and cut the mango, Jicama, and radish add to a bowl</li>

<li>Can store in refrigerator for 2-3 days.</li>
<li>For prep one day ahead, cut everything and make dressing and store separately.  Mix when ready to use. </li>
<li>Do not use ripe mangoes, need them to maintain its shape.  Medium ripe mango works best.</li>
<li>Can add raw papaya julienne cut the same way and in equal amounts for another healthy twist.</li>

<li>For an even speedier method, use prepared or store bought Green Chutney (Mint/Coriander), instead of fresh coriander and mint. Add 1 tablespoon of mint chutney and 1 tablespoon of coriander chutney to 1 cup of yogurt along with salt and Chaat Masala.</li>
<li>The consistency will depend on which yogurt you use.  Greek Yogurt is best for a thicker creamy consistency, while low fat yogurt can be used for thinner consistency.</li>
<li>Can be stored in fridge, will stay good up to the expiration date of the yogurt and milk used.</li>
