We all love avocados, but tired of the same old guacamole, in salads or avocado toast?  Typically Avocados are used in savory dishes, but have you ever considered avocados for a dessert?  Yes dessert!  Here is THE simplest instant dessert featuring avocados.  You can make it with only 3 ingredients, ready in less than 5 mins and the best part – no cooking required!  

We all know the health benefits of this delicious fruit and are trying to incorporate more of it in our diet. Avocados are high in nutritional value: vitamins B, C and E which are great for your skin, Lutein for eyes, and they have more Potassium than bananas! It is loaded with healthy fats, fibers, and many other vital antioxidants.  With its bright green color and creamy texture, its a super fruit most everyone loves.

Pudding typically requires cooking, using custard powder and or eggs.  In this recipe, Avocado itself acts as a great thickener and turns into a thick pudding consistency with zero cooking needed. This is a popular dessert in my household as my kids can make it themselves. Just blend together 3 ingredients and a beautiful thick decadent dessert is served!

This is sweet, creamy, luscious instant pudding should be enjoyed immediately.  Avocados oxidize and turns brown when exposed to air (like apples and bananas), this is a dessert that should be made when ready to devour immediately. It should not be stored.

Instant Avocado Pudding - 3 ingredients and ready in less than 5 mins

Ingredients:

  • 2 small ripe avocados
  • 2 cups cold whole milk (or evaporated milk for thicker consistency)
  • 1/3 to 1/2 cup sugar, depending on how sweet you like it. You can easily substitute any other sweetening agent like honey, stivia…etc. You can also use powdered sugar if you like.


Method:

  1. In a blender, blend together avocados and milk for about 2 mins or until completely smooth and like a pudding consistency. There should be no lumps at all, must be fully incorporated and smooth. 
  2. Add a little sugar at a time till you get the sweetness level you like between 1/3  up to 1/2 cups of sugar. Blend so that the sugar is incorporated into it so that you don’t have grainy sugar granules in the final dish.
  3. Instant Avocado Pudding is ready to devour!

Tips:

  • This dessert should be enjoyed immediately before it changes color. Like apples and bananas, Avocado oxidizes and changes color when exposed to air. Once cut open, use it right away.
  • You can easily adjust the amount of milk to change the consistency of the pudding. Use less milk to make it thicker.
  • You can also substitute other forms of sweeteners like honey, agave or maple syrup to your taste.
  • If you would like to add a more Indian touch, add 1/8 tsp cardamom powder (elaichi) and top with chopped nuts.
