Simple microwave recipe for Coconut barfi (Khopra pak), with only 4 ingredients and ready in 10 mins!

Microwave Coconut Barfi, Khopra Pak

Barfi originates from the Indian subcontinent and is a generic term for a fudge-like dessert (mithai).  There are endless kinds of Barfi’s, made from different flours, vegetables, fruits, nuts or milk products. They are typically made for celebrations and special occasions so they are very rich, cooked with ghee and topped with nuts. It is sweet, delicious and hard to resist. Many of them take a lot of time, hard work (a lot of stirring) and are loaded with calories!  One common version is made of coconut called Khopra Paak.  Here is a simple, heathier beginners recipe for Coconut barfi / Khopra paak. Khopra Paak can be white in color, sometimes pink, or even green when food color is added.  It looks beautiful when layered with multiple colors, perfect for entertaining.

This coconut barfi recipe is made in the microwave, uses only 4 main ingredients and can be ready in 10 mins!  This is the easiest barfi you can learn to make, perfect for a beginner.  My aunt always made it pink, so for me Coconut Barfi has to be pink. However, to avoid using food color, a simple addition of Rooh Afza syrup  gives it a beautiful pink color. You can decorate the top with chopped nuts or with edible foil if available.  You don’t need any special occasion to make this simple dessert, impress your friends and family today.

Microwave Coconut Barfi, Khopra Pak

Ingredients:

  • 3 cups of dry milk powder
  • 1 cup dry desiccated coconut
  • 1 cup sugar
  • 1 1/4 cup heavy whipping cream (liquid)
  • Optional 1/8 tsp Cardamom (elaichi powder)
  • Optional 2-4 tbsp of Rooh Afza syrup (depends on shade of pink you like)
  • Optional chopped nuts for garnish

Method:

  1. In a deep microwaveable bowl, mix together milk powder, coconut, sugar and heavy cream till they are well incorporated. Mixture will be a thick sticky dough.  Dish must be double in height of the mixture to avoid overflowing while it bubbles during cooking.
  2. Microwave uncovered for 5 mins, pull out and stir
  3. Microwave uncovered again for 2 mins, pull out and stir
  4. Microwave uncovered again for 2 mins, pull out and stir 
  5. Microwave uncovered again for 1 min, pull out and stir (total of 10 mins, be sure to stir in between)
  6. Add Rooh Afza and stir well till the color is even throughout
  7. Lay out in a greased tray or lined with parchment or wax paper  
  8. Garnish with nuts on top and let it set at room temp on the counter for a few hours.  Enjoy!

Tips:

  • Do not put in microwave for the total 10 mins all at once, it will burn in the middle due to uneven heat in the microwave. Must stir in between.
  • You can variate the flavors easily by replacing Rooh Afza with any food colors to make colorful layers or even chocolate powder or syrup for something different.
